Bonus Baking DIY

Since the first Bonus we’re baking at our Christmas Bonus Bakery is the Gingerbread Bonus, we thought it would make the most sense to use this post to share our secret recipe for making one, would it not? Well then, let’s get to it!

To make 12 servings, you’ll need the following ingredients: ¾ cup melted butter (170 g), ¾ cup brown sugar (165 g), ¾ cup molasses (250 g), 1 teaspoon salt, 2 teaspoons cinnamon, 2 teaspoons ground ginger, ¼ teaspoon allspice, 1 egg, 1 teaspoon baking powder, ½ teaspoon baking soda and 3 ½ cups flour (440 g).

You’ll want to start by whisking the melted butter, brown sugar, molasses, salt, cinnamon, ginger, and allspice in a large bowl until the substance has become smooth. Then you would add the egg and whisk the contents of the bowl, fold in the baking powder, soda and half of the flour. After you’ve done that, add the rest of the flour until the dough comes together, wrap everything up in a plastic wrap and let it cool in the refrigerator for about 30 minutes, while you preheat your oven to 350°F/180°C.

**While you wait, how about a round of gameplay?**

Now that these 30 minutes have passed and that you’ve got the oven ready, roll out the dough so that it becomes about one quarter of an inch thick and use a small knife to cut it into the shapes you want to have - the more festive, the better. Once cut, place the shapes onto a parchment paper-lined baking sheet and bake from for 8 to 10 minutes. When that’s done, transfer your Gingerbread cookies to a baking rack - and be careful while doing so – and then let them cool there completely.

To make the icing for the top, divide the powdered sugar in three bowls - equally - and add two tablespoons of milk to each of them. If you’d like to add food coloring, now would be the time to do it. If not, simply fill a piping bag (or bags) with the icings, decorate your cookies and let them relax for a while.
